Warm Halal Beef Bacon Salad

  • 3 tablespoons olive oil
  • 3 or 4 rashers smoked or traditional halal beef bacon
  • 1 vine tomato, seeds removed, sliced
  • 55g/2oz spinach leaves
  • 1 tablespoon chopped fresh chives
  • salt and freshly ground black pepper
  • 2 large free range eggs


  1. Heat one tablespoon of the olive oil in a frying pan and fry the halal beef bacon until golden-brown and crisp. Remove from the pan and tear each rasher into three pieces.

  2. Blanch spinach leaves, drain and place on kitchen towel to dry.

  3. Place the halal beef bacon into a bowl with the remaining ingredients and stir well.

  4. Decorate with hard boil eggs.

  5. Ready to serve.
